Low Carb Beanless Chili

Ingredients

  • 2 tbsp butter ((or ghee))
  • 2 bell pepper ((or ghee))
  • 1 yellow onion ((or ghee))
  • 1 cup chopped celery
  • 1 lb ground beef
  • 1 lb ground Italian sausage
  • 28 oz diced tomatoes
  • 14 oz tomato sauce
  • 2 cup beef broth
  • 6 oz brewed coffee ((or ghee))
  • 1 tbsp cumin
  • 2 tbsp chili powder ((or ghee))
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp ground oregano
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. In a large skillet, melt butter over medium-high heat.
  2. Add chopped peppers, onion and celery and sauté for 5-7 minutes until tender.
  3. Spoon the vegetables out of the pan and set aside.
  4. To the pot add ground beef and ground Italian Sausage.
  5. Brown the meat, then drain any excess fat.
  6. Return the peppers, onion, and celery to the pan.
  7. Add in diced tomatoes, tomato sauce, beef broth, and coffee.
  8. Stir to combine.
  9. Add in spices — cumin, chili powder, garlic powder, onion powder, ground oregano, salt and black pepper.
  10. Bring to a boil, then reduce heat, cover and simmer for 1.5-2 hours.
  11. Paleo and Whole 30: Garnish with avocado slices, onion, and/or chopped fresh parsley.
  12. Keto / Low-carb: Garnish with sour cream, cheese, and/or avocado slices.

  14. Wait for the indicator to say “hot.” Melt 2 tablespoons butter.
  15. Add in chopped peppers, onion and celery and sauté for 5-7 minutes, until tender.
  16. Remove the vegetables from the pot.
  17. To the pot add in ground beef and ground Italian Sausage.
  18. Brown the meat, draining any excess liquid.
  19. Return the peppers, onion and celery to the pot.
  20. Add in diced tomatoes, tomato sauce, beef broth, and coffee.
  21. Stir to combine.
  22. Add in spices — cumin, chili powder, garlic powder, onion powder, ground oregano, salt and black pepper.
  23. Stir to combine.
  24. Place the lid on and pressure cook on Manual at high pressure for 20 minutes, then release manually.
  25. Paleo and Whole 30: Garnish with avocado slices, onion, and/or chopped fresh parsley.
  26. Keto / Low-carb: Garnish with sour cream, cheese, and avocado.

  34. Stir to combine.
  35. Add in spices — cumin, chili powder, garlic powder, onion powder, ground oregano, salt and black pepper.
  36. Stir to combine.
  37. Cook on low for 6-8 hours or on high for 4-6 hours
