Keto Salmon and Creamy Turmeric Veggies

Ingredients

  • 3 tbsp coconut oil ((or avocado oil))
  • 1 onions (medium)
  • 1 clove garlic
  • 1 tbsp fresh ginger ((or avocado oil))
  • 1 tbsp fresh turmeric
  • 1/2 cup coconut milk ((or avocado oil))
  • 1/4 cup water
  • 1 tbsp lime juice
  • 3 cup broccoli ((or avocado oil))
  • 3 cup cauliflower ((or avocado oil))
  • sea salt
  • freshly ground pepper
  • 24 oz salmon fillets ((or avocado oil))

Instructions

  1. Heat the oil in a large frying pan or cast iron pan.
  2. Add the onion, garlic, ginger, and turmeric.
  3. Cook over medium heat, stirring often, until golden, about 8 minutes.
  4. Add the coconut milk, water, lime zest, and lime juice to the mixture and bring to a simmer.Stir in the vegetables and season with salt and pepper.
  5. Cover and remove from the heat.Preheat a grill pan.
  6. Rub the salmon with salt and pepper.
  7. Grill with the skin side touching the pan over medium heat for 5 minutes.
