Keto Kung Pao Chicken

Ingredients

  • 1 TBSP sesame oil
  • 4 chicken breasts
  • 1 cup peanuts
  • 4 green onions
  • 8 oz snap peas
  • 4 TBSP B raggs Liquid Aminos (or gluten free soy sauce)
  • 2 TBSP rice vinegar
  • 1 TBSP hoisin sauce
  • 4 tsp grated ginger
  • 1 TBSP chopped garlic
  • optional bib lettce or riced cauliflower

Instructions

  1. In a large skillet or wok, heat sesame oil.
  2. Add chicken pieces and cook until golden brown.
  3. you may need to cook in smaller batches depending on the size of your skillet.
  4. While chicken is cooking, mix together the sauce ingredients in a separate bowl.
  5. Once all chicken is cooked and golden, add veggies and peanuts.
  6. Add the sauce and mix until chicken is well-coated.
  7. Cook for a minute or two until vegetables become just slightly tender.
  8. Add chili sauce if desired.
  9. Serve over a bed of cauliflower rice or lettuce wrap style.
