Ingredients
- 1 yellow onion ((large, diced))
- 1 cup carrots ((large, diced))
- 500 g cauliflower
- 1 tbsp butter
- 1 lb ground beef
- 1/2 cup green peas
- 1 cup beef ((large, diced))
- 4 tbsp half & half
- 112 g cheese ((large, diced))
Instructions
- Preheat oven to 410F.Add 1tbsp butter to pan and saute onion until translucent.Increase heat to High, add ground beef, and cook until browned.
- Add seasonings as desired (salt, pepper, garlic, cayenne).Reduce heat to Medium, add carrots, and cook 5 minutes.Add peas and cook 4 minutes.Increase heat to High, add beef boullion, and simmer until sauce has reduced slightly (10-15minutes).
- Steam cauliflower in the microwave until tender (in 5 minute increments).Add 40g butter and 2 tbsp half and half to the steamed cauliflower.
- Blend until smooth.
- Season with salt & pepper to taste.Put meat mixture in a baking dish (9x9) and top with cauliflower mash.
- Top with cheese.
- Bake 20 minutes.
- Allow to cool for 5 minutes before cutting.
