Keto Cottage Pie

Ingredients

  • 1 yellow onion ((large, diced))
  • 1 cup carrots ((large, diced))
  • 500 g cauliflower
  • 1 tbsp butter
  • 1 lb ground beef
  • 1/2 cup green peas
  • 1 cup beef ((large, diced))
  • 4 tbsp half & half
  • 112 g cheese ((large, diced))

Instructions

  1. Preheat oven to 410F.Add 1tbsp butter to pan and saute onion until translucent.Increase heat to High, add ground beef, and cook until browned.
  2. Add seasonings as desired (salt, pepper, garlic, cayenne).Reduce heat to Medium, add carrots, and cook 5 minutes.Add peas and cook 4 minutes.Increase heat to High, add beef boullion, and simmer until sauce has reduced slightly (10-15minutes).
  3. Steam cauliflower in the microwave until tender (in 5 minute increments).Add 40g butter and 2 tbsp half and half to the steamed cauliflower.
  4. Blend until smooth.
  5. Season with salt & pepper to taste.Put meat mixture in a baking dish (9x9) and top with cauliflower mash.
  6. Top with cheese.
  7. Bake 20 minutes.
  8. Allow to cool for 5 minutes before cutting.
