Keto Chicken Satay Skewers

Ingredients
- 1 lb boneless chicken ((order here))
- 3 tbsp soy sauce ((order here))
- 1 tbsp fish sauce ((order here))
- 1/2 cup coconut milk ((order here))
- 1/2 tsp garlic powder ((order here))
- 2 tbsp avocado oil ((order here))
- 1/2 cup peanut butter ((order here))
- 1/4 cup water
- 2 tbsp tamari soy sauce ((order here))
- 1 tsp minced garlic
- 1/4 tsp cayenne pepper ((order here))
- 1 tbsp lemon juice ((order here))
- 1 bunch cilantro ((order here))
Instructions
- Cut up the chicken into tenders and place in a large bowl.
- Add the marinade ingredients besides the avocado oil and stir to coat the chicken.
- Let the mixture sit for a while and prepare the peanut sauce.
- Mix all the sauce ingredients until smooth and put into ramekins.
- Put the chicken on wood or metal skewers.
- Heat up a grill pan or cast iron skillet over medium high heat and avocado oil in the pan.
- Tilt the pan to coat it.
- Add the chicken skewers and cook for 3-4 minutes on each side.
- Place the cooked skewers on a platter with satay sauce ramekins, cover with cilantro and serve.
