Keto chicken Caprese casserole

Ingredients

  • 1 chicken (1 rotisserie chickenrotisserie)
  • 7 oz cherry tomatoes
  • 8 oz fresh mozzarella cheese
  • 2 tbsp green pesto
  • 1 cup crème fraîche ((1 rotisserie chickenrotisserie))
  • 2 oz parmesan cheese
  • 7 oz dark leafy greens
  • 4 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the chicken into bite-sized pieces or shred using a fork. Slice the cherry tomatoes in half and cut the mozzarella cheese into small pieces.
  3. Place all three (chicken, cherry tomatoes, and mozzarella) in a baking dish. Add pesto, crème fraiche, and half of the parmesan cheese.
  4. Stir until evenly distributed.
  5. Season with salt and pepper to taste. Sprinkle the remaining parmesan cheese on top.
  6. Bake for 20 minutes or until golden brown. Serve with leafy greens and olive oil.
