Ingredients

  • 1 cup red cabbage ((shredded))
  • 1 cup green cabbage ((shredded))
  • 1/4 cup scallions ((shredded))
  • 1/4 cup chopped cilantro
  • 4 cup noodles ((shredded))
  • 1/4 cup peanuts ((shredded))
  • 2 tbsp minced ginger
  • 1 tsp minced garlic
  • 1/2 cup filtered water
  • 1 tbsp lime juice
  • 1 tbsp toasted sesame oil
  • 1 tbsp wheat free soy sauce
  • 1 tbsp fish sauce ((shredded))
  • 1/4 cup peanut butter ((shredded))
  • 1/4 tsp cayenne pepper
  • 1/2 tsp kosher salt
  • 1 tbsp sweetener ((shredded))

Instructions

  1. Combine all of the salad ingredients in a large bowl.Combine all of the dressing ingredients in a blender or magic bullet.Blend until smooth.Pour the dressing over the salad and toss to coat.Serve immediately, or store in an airtight container in the refrigerator for up to 5 days.
  2. Do not freeze.
