Fried Cheesecake Bites (Keto, Low Carb)

Ingredients

  • 8 oz cream cheese
  • 1/2 cup erythritol
  • 2 tbsp cream ((divided))
  • 1/2 tsp vanilla extract
  • 1/2 cup almond flour

Instructions

  1. Allow the cream cheese to sit on the counter for 20 minutes to soften.
  2. Fit a stand mixer with paddle attachment.
  3. Mix the softened cream cheese, 1/2 cup erithrytol, vanilla and heavy cream until smooth.
  4. Scoop onto a parchment paper lined baking sheet.
  5. Freeze for about 30 minutes, until firm
  6. Mix the almond flour with the 2 Tablespoons erythritol in a small mixing bowl.
  7. Dip the frozen cheesecake bites into 2 Tablespoons cream, then roll into the almond flour mixture.
  8. Place in an air fryer for 5 minutes.
  9. Alternatively, you can bake them in the oven for 8 minutes to achieve that crispy outside coating.
