Fluffy Keto Waffles

Ingredients

  • 1 1/2 cup almond flour
  • 2 tbsp coconut flour
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 2 whole eggs
  • 1 tbsp maple extract
  • 2 tbsp Swerve Sweetener (or zero calorie sweetener of choice)
  • 2 tbsp melted butter
  • 1 1/4 cup milk ((or zero calorie sweetener of choice))

Instructions

  1. Add all ingredients to a large bowl or stand mixer.
  2. Mix well until smooth.
  3. Let sit for 5 minutes.Preheat waffle iron and coat with non stick spray, butter, or coconut oil.Pour batter into waffle iron and cook for 3-4 minutes until golden brown on each side.
  4. Place in the oven to crisp while you repeat cooking remaining waffles.
