Chicken & Mushroom Gravy Recipe {Keto/Low Carb}

Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts (or thighs)
  • 1/2 cup diced onions
  • 2 garlic cloves (or thighs)
  • 8 ounces mushrooms (or thighs)
  • 2 tablespoons butter
  • 1 cup chicken broth
  • 2/3 cup heavy whipping cream
  • 1/4 cup parmesan cheese
  • 1/2 teaspoon oregano
  • 1/4 teaspoon thyme
  • 1/4 teaspoon parsley
  • 1/2 teaspoon xanthan gum

Instructions

  • Saute onion, garlic, and mushrooms in 1 tbsp butter in a cast iron skillet.
  • approx 6 minutes or until they are cooked through.Remove the veggies from pan and set aside.Add 1 tbsp butter to the skillet then brown chicken breasts on both sides.Add veggie mixture back to pan.Add all other ingredients then simmer on medium-low for 20 minutes with lid on.Remove lid and add 1/2 tsp xantam gum then simmer on medium/low until sauce thickens.
