Bacon Eggs Benedict

Ingredients

  • 3 tbsp almond flour
  • 2 tbsp butter
  • 1 large eggs
  • 1/2 tsp baking powder
  • 1/4 tsp chili powder
  • 1/4 tsp onion powder
  • 4 slice bacon
  • 2 tbsp hollandaise sauce ((Trader Joe's))

Instructions

  1. Add mug cake ingredients to a mug (or round dish) and mix together.
  2. Microwave for 1 minute 30 seconds, or until puffed and cooked through.
  3. Lightly tap mug upside down to dislodge cake.
  4. Slice in half and set aside.
  5. Cook bacon in a pan over medium heat until cooked through.
  6. While bacon is cooking, poach 2 eggs.
  7. Once bacon and eggs are cooked, assemble by placing 2 slices bacon and 1 poached egg on top of each half of the mug cake.
  8. Place 1 tbsp.
  9. Hollandaise Sauce over each egg
