Ingredients

  • 1/4 cup coconut flour
  • 1/4 cup almond flour
  • 1/4 cup flax seed meal
  • 1 tsp baking powder
  • 1 tsp stevia ((or other sugar substitute))
  • 1/4 tsp cinnamon
  • 3/4 cup egg whites ((or other sugar substitute))
  • 4 whole eggs
  • 1 tsp pure vanilla extract

Instructions

  1. STEP 1 To MAKE THE WAFFLES: Heat the waffle iron to medium-high heat.
  2. STEP 2 Coat with cooking spray.
  3. STEP 3 In a large bowl, whisk together the coconut flour, almond flour, flax meal, baking powder, stevia, and cinnamon.
  4. STEP 4 In another medium bowl, beat the egg whites until stiff peaks form.
  5. STEP 5 Add the whole eggs and vanilla to the dry ingredients.
  6. Mix well to combine.
  7. STEP 6 Gently fold the beaten egg whites into the dry ingredients until fully incorporated.
  8. -Pour the batter onto the preheated waffle iron.
  9. Cook according to waffle iron directions.
  10. STEP 7 TO MAKE THE WHIPPED CREAM: In a medium bowl, whip the heavy cream for 3 to 4 minutes, until thick.
  11. -Add the stevia.
  12. Continue to whisk until stiff peaks form, about 1 minute more.
  13. STEP 8 Top the waffles with equal amounts of the whipped cream and serve.
