Ingredients

  • 2 oz butter ((macadamia))
  • 2 large eggs
  • 1 large egg whites
  • 4 tbsp coconut flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp erythritol
  • 1/2 tbsp psyllium husks ((macadamia))

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Line a baking pan with a sheet of parchment paper.
  3. In a small bowl, mix all the dry ingredients, leaving out only the psyllium husks powder.
  4. It is best to sift the coconut flour.
  5. Make macadamia butter if you don't have any.
  6. Just pulse the nuts in a bowl of an S-blade food processor (scraping the sides of the bowl one or twice) until you get runny butter.
  7. Mix the eggs and the egg white in a medium bowl, using an electric mixer.
  8. Add the macadamia butter and mix again until well incorporated.
  9. Combine the egg mixture and the dry mixture, and mix well.
  10. At the very end, add the psyllium husk powder and mix some more.
  11. Form four buns and place them on the baking pan.
  12. Wet your hand to make this step less sticky.
  13. Bake for 30 minutes.
  14. The buns must pass the toothpick test.
  15. Put them on a wire rack and let them cool.
  16. Serve with anything you desire.
  17. Even sugar-free marmalade.
