Ten Minute Veggie Fried "Rice" with Ham (Low Carb) Yum

Ingredients
- 1 tablespoon oil
- 1 1/2 cups ham (cubed)
- 3 1/4 teaspoons soy sauce (cubed)
- 1 clove garlic
- 1 piece ginger (cubed)
- 1/4 teaspoon crushed red pepper flakes
- 1 head broccoli florets (cubed)
- 1/2 cup water
- 1/4 teaspoon sesame oil
- 12 ounces riced cauliflower

Instructions
- This recipe comes together very fast.
- Make sure you have all your ingredients cleaned, chopped, and ready to go before starting.
- Have a plate handy to place the cooked ham on.
- Heat a large skillet over high heat and add the oil and the ham.
- Let the ham brown for 2 minutes then add 1/4 teaspoon of soy sauce.
- Toss to coat then remove ham to the plate.
- Add the garlic, red pepper flakes, and ginger.
- Cook for 30 seconds then add broccoli and water.
- Simmer the broccoli over high heat until the water evaporates 4-5 minutes.
- Add the 3 teaspoons of soy and the ham, toss to combine, then push it all over to one side of the pan.
- Crack the eggs in the other side and quickly scramble them.
- When they are done mix it all together.
- Add the cauliflower and the sesame oil.
- Toss until heated through.
- Top with desired condiments.
