Super Easy Sausage and Kale Egg Cups (Whole30 Compliant, Keto)

Ingredients

  • 1/2 bunch kale ((fresh, chopped into small pieces))
  • 8 oz pork ((fresh, chopped into small pieces))
  • 1/4 tsp salt ((fresh, chopped into small pieces))

Instructions

  1. Preheat oven to 400F.
  2. Cook pork, if raw.
  3. Alternatively, you can use precooked sausages or patties and chop them up.
  4. Saute kale in a skillet with coconut oil over medium heat.
  5. Crack eggs into a bowl and add cooked kale and cooked pork.
  6. Stir until fully incorporated.
  7. Spoon into baking cups.
  8. Cook for 20-25 minutes.
  9. This recipe makes approximately 12 cups.
