Stuffed Peppers

Ingredients

  • 2 green pepper
  • 1 small onion
  • 2 sausage links
  • 1 1/2 oz parmesan cheese
  • 2 oz cream cheese
  • 2 quail eggs

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the green peppers and remove the seeds and membranes.
  3. Remove the sausage from its casing and cook in a skillet over medium heat with the diced onion until browned and cooked through.
  4. Remove from heat and stir in the cream cheese and half the Parmesan until melted and combined.
  5. Stuff each pepper with the sausage and cheese mixture.
  6. Place the stuffed peppers in a baking dish, crack a quail egg on top of each, and sprinkle with remaining Parmesan.
  7. Bake for 25-30 minutes until the peppers are tender and the eggs are set.
