Stuffed Peppers

Ingredients
- 2 green pepper
- 1 small onion
- 2 sausage links
- 1 1/2 oz parmesan cheese
- 2 oz cream cheese
- 2 quail eggs
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the green peppers and remove the seeds and membranes.
- Remove the sausage from its casing and cook in a skillet over medium heat with the diced onion until browned and cooked through.
- Remove from heat and stir in the cream cheese and half the Parmesan until melted and combined.
- Stuff each pepper with the sausage and cheese mixture.
- Place the stuffed peppers in a baking dish, crack a quail egg on top of each, and sprinkle with remaining Parmesan.
- Bake for 25-30 minutes until the peppers are tender and the eggs are set.
