Ingredients

  • 3 large eggs
  • 3 oz cream cheese
  • 1/4 tsp baking powder
  • 1/2 tsp vanilla extract
  • 2 tbsp erythritol
  • 10 strawberries (medium)
  • 1 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Separate the eggs. Beat the cream cheese, egg yolks, baking powder, vanilla, and 1 tablespoon erythritol until smooth.
  3. Whip the egg whites to stiff peaks in a separate bowl, then gently fold into the yolk mixture.
  4. Spoon the batter into 4-6 rounds on the baking sheet.
  5. Bake for 15-18 minutes until golden. Let cool completely.
  6. Slice the strawberries, toss with remaining erythritol, and let sit for 10 minutes.
  7. Whip the heavy cream until soft peaks form.
  8. Layer the shortcakes with whipped cream and strawberries to serve.
