Strawberry Shortcakes

Ingredients
- 3 large eggs
- 3 oz cream cheese
- 1/4 tsp baking powder
- 1/2 tsp vanilla extract
- 2 tbsp erythritol
- 10 strawberries (medium)
- 1 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Separate the eggs. Beat the cream cheese, egg yolks, baking powder, vanilla, and 1 tablespoon erythritol until smooth.
- Whip the egg whites to stiff peaks in a separate bowl, then gently fold into the yolk mixture.
- Spoon the batter into 4-6 rounds on the baking sheet.
- Bake for 15-18 minutes until golden. Let cool completely.
- Slice the strawberries, toss with remaining erythritol, and let sit for 10 minutes.
- Whip the heavy cream until soft peaks form.
- Layer the shortcakes with whipped cream and strawberries to serve.
