Spicy Italian Keto Stuffed Peppers

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground sausage ((spicy Italian style))
  • 1 small onion ((spicy Italian style))
  • 1 cup mushrooms ((spicy Italian style))
  • 1 cup riced cauliflower
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp tomato paste
  • 1/2 cup chicken broth
  • 1/2 cup parmesan cheese
  • 1 cup mozzarella cheese
  • 3 bell pepper ((spicy Italian style))
  • 1/4 cup fresh basil

Instructions

  1. Preheat oven to 350.
  2. Add olive oil to a large pan set to medium heat.
  3. Brown Italian sausage for 3-4 minutes.
  4. Add onions, mushrooms, riced cauliflower, salt, pepper, and Italian seasoning until vegetables are mostly tender, about 5 minutes.
  5. Add tomato paste and broth.
  6. Stir well to combined.
  7. Simmer filling for 8-10 minutes under low-medium heat.
  8. Stir in parmesan cheese.
  9. Adjust seasoning if needed.Slice peppers in half (lengthwise) and scoop in filling.
  10. Top with mozzarella cheese and bake for 20-25 minutes until tops are golden brown.
  11. Garnish with fresh basil.
