Southwest Crispy Chicken Thighs

Ingredients
- 4 bone in chicken thighs (large)
- 2 jalapeno chilies
- 2 tablespoons olive oil
- 1 teaspoon salt
- 3 black pepper (large)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 3/4 teaspoon chili powder
- 1/4 teaspoon cumin
- 1/4 teaspoon cayenne pepper
Instructions
- In a small mixing bowl, mix together salt, pepper, garlic powder, onion, powder, chili powder, cumin, and cayenne pepper Slowly whisk in 2 tablespoons of olive oil to make the marinade Slice the jalapenos about 1/4 inch thick.
- Place chicken thighs in Ziplock bag with sliced jalapenos Pour the marinade over the chicken and work with hands to ensure the thighs are evenly coated.
- Let Marinade for 4-6 hours.
- Place the chicken skin side up on a sheet pan with some of the jalapenos and bake at 400 degrees for 30 minutes.
- Pour off the grease that is on the baking sheet and flip the chicken.
- Bake for another 25-30 minutes.
- (If you are using smaller thighs, you may need to bring the total baking time down to 50 minutes.) Serve garnished with green onions and a lime wedge
