Shrimp Salad with Avocado and Cilantro

Ingredients

  • 3 tbsp fresh lime juice
  • 2 tbsp extra-virgin olive oil
  • 3/4 cup fresh cilantro ((chopped, I like a bit more cilantro))
  • 1/8 tsp cracked black pepper ((chopped, I like a bit more cilantro))
  • 1 pinch salt ((chopped, I like a bit more cilantro))
  • 1 lb shrimp ((chopped, I like a bit more cilantro))
  • 2 avocado (ripe)
  • 2 cup baby spinach
  • 2 cup lettuce ((chopped, I like a bit more cilantro))

Instructions

  1. Cilantro Dressing/MarinadeCombine all ingredients in a bowl and mix.SaladDrain any excess water off shrimp if using thawed shrimp.
  2. Pour cilantro dressing over shrimp.
  3. Stir to coat.
  4. Cover and refrigerate for at least 1 hour (2 or 3 is better).Wash and dry lettuce (use a Salad Spinner or just let it sit in a strainer).
  5. Divide among plates.Cut avocado into bite-size wedges (about 1/2 inch cubes work well too).
  6. Sprinkle over lettuce.Add marinated shrimp to the top.Top with marinated shrimp and leftover dressing.
  7. Enjoy!
