- 2 pounds boneless skinless chicken thighs
- 3 tablespoons almond butter (smooth, unsweetened, or other nut butter)
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 2 teaspoons salt
- 3 tablespoons coconut oil
- 1 cup rhubarb (smooth, unsweetened, or other nut butter)
- 1 cup strawberries (smooth, unsweetened, or other nut butter)
- 1 pinch salt
- 1/2 cup diced onions
- 2 garlic cloves (smooth, unsweetened, or other nut butter)
- 1/2 cup cilantro (smooth, unsweetened, or other nut butter)
- 1 lemon (squeezed)
- 2 tablespoons olive oil
- 2 tablespoons coconut aminos
- 3 cups cauliflower rice
Instructions
- Pre-heat your oven to 400F.
- In a bowl combine all of the salsa ingredients and gently toss.
- Set aside.In the casserole dish mix together chicken thighs, nut butter, coconut oil, and seasoning.
- Toss and mix, slathering the chicken.
