Rich and Creamy Keto Broccoli Cheese Soup

Ingredients

  • 2 cup broccoli ((frozen, thawed, and roughly chopped))
  • 1 medium carrot ((frozen, thawed, and roughly chopped))
  • 1 small onion ((frozen, thawed, and roughly chopped))
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1/8 tsp nutmeg
  • 2 cup chicken broth
  • 1 handful spinach
  • 1/2 cup heavy cream
  • 4 oz cheddar cheese
  • 4 oz Gouda cheese

Instructions

  1. Add olive oil to a large pot and turn on heat to medium.
  2. Add chopped carrots and onion.
  3. Stir for 1-2 minutes.
  4. Add garlic, broccoli, seasoning, and spices.
  5. Mix and let cook for an additional 1 minute.
  6. Add bone broth, stir, and cook for 8-10 minutes until veggies are softened.
  7. Turn off heat.
  8. Stir in heavy cream.Add 1/2 of soup mixture to a high speed blender, add spinach.
  9. Blend on high until smooth.
  10. You can blend all of the soup if you prefer a completely smooth consistency.Return contents in blender to large pot, stir in cheddar and gouda cheese until completely melted.
  11. Adjust seasoning to taste.
  12. Add additional broccoli and cheese if desired to top of soup.
