Peanut Flour Pie Crust

Ingredients

  • 1 1/2 cup almond flour
  • 1/3 cup peanut flour ((roasted defatted, I used Byrd Mill but Sukrin will work))
  • 1/3 cup whey protein powder ((roasted defatted, I used Byrd Mill but Sukrin will work))
  • 1/4 cup Swerve Sweetener (Confectioners)
  • 1/4 tsp salt
  • 7 tbsp salted butter ((roasted defatted, I used Byrd Mill but Sukrin will work))

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a large bowl, whisk together the almond flour, peanut flour, whey protein powder, Swerve sweetener, and salt.
  3. Cut the cold butter into small pieces and work it into the dry ingredients using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Press the mixture firmly and evenly into a 9-inch pie dish, going up the sides as well.
  5. Prick the bottom of the crust with a fork in several places.
  6. Bake for 12-15 minutes until lightly golden and set.
  7. Let cool completely before adding your pie filling.
