Peanut Flour Pie Crust

Ingredients
- 1 1/2 cup almond flour
- 1/3 cup peanut flour ((roasted defatted, I used Byrd Mill but Sukrin will work))
- 1/3 cup whey protein powder ((roasted defatted, I used Byrd Mill but Sukrin will work))
- 1/4 cup Swerve Sweetener (Confectioners)
- 1/4 tsp salt
- 7 tbsp salted butter ((roasted defatted, I used Byrd Mill but Sukrin will work))
Instructions
- Preheat the oven to 325°F (160°C).
- In a large bowl, whisk together the almond flour, peanut flour, whey protein powder, Swerve sweetener, and salt.
- Cut the cold butter into small pieces and work it into the dry ingredients using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Press the mixture firmly and evenly into a 9-inch pie dish, going up the sides as well.
- Prick the bottom of the crust with a fork in several places.
- Bake for 12-15 minutes until lightly golden and set.
- Let cool completely before adding your pie filling.
