No Bake Paleo Vegan Brownies (Keto, Sugar Free, Low Carb)

Ingredients

  • 1 kilogram unsalted hazelnuts (2.2 pounds)
  • 1/2 cup cocoa powder
  • 1/2 cup sweetener (2.2 pounds)
  • 1 kilogram dry roast peanuts (2.2 pounds)
  • 1/2 cup cocoa powder
  • 1/2 cup sweetener (2.2 pounds)
  • 1 1/2 cups coconut cream (2.2 pounds)
  • 3 cups chocolate chips (2.2 pounds)
  • 2 cups chocolate-hazelnut spread (2.2 pounds)
  • 1/2 cup sweetener (2.2 pounds)
  • 3/4 cup coconut flour
  • 1/2 cup chopped nuts (2.2 pounds)
  • 2 cups medjool date (2.2 pounds)
  • 4 cups nuts (2.2 pounds)
  • 1/2 cup cocoa powder
  • 1/4 teaspoon vanilla extract
  • 1 1/2 cups coconut cream (2.2 pounds)
  • 3 cups chocolate chips (2.2 pounds)

Instructions

  • Ingredients For the Date-Free No Bake Brownies (Keto-friendly) 2 cups homemade chocolate hazelnut spread * See notes 1/2 cup sticky sweetener of choice ** See notes 3/4 cup coconut flour 1/2 cup chopped nuts of choice For the original No Bake Paleo Vegan Brownies 2 cups medjool dates, packed 4 cups nuts of choice, divided I used cashews 1/2 cup cocoa powder 1/4 tsp vanilla extract For the healthy chocolate frosting 1 1/2 cups coconut cream, chilled 3 cups chocolate chips of choice I used stevia sweetened chocolate chips Instructions In a high-speed blender or food processor, combine all your ingredients and blend until a thick batter remains.
  • If the batter is too thick/crumbly, add some liquid (milk, water).
  • Alternatively, you can use a mixing bowl for the date-free brownies.
  • Line an 8 x 8-inch baking pan with parchment paper.
  • Transfer the raw brownie batter into it and press firmly in place.
  • Refrigerate.
  • While the brownie batter is firming up, prepare your healthy chocolate frosting.
  • Remove the canned coconut cream from the refrigerator and separate the cream from it.
  • In a microwave-safe bowl or stovetop, combine your chocolate chips of choice with coconut cream and melt.
  • Allow to cool before topping your no bake brownies.
  • Refrigerate until firm.
  • Slice in 10 pieces.
