Matcha Green Tea Coconut Cookies

Ingredients

  • 1/2 cup almond flour
  • 2 tbsp coconut flour
  • 1 tbsp gelatin ((collagen))
  • 2 scoop oil ((collagen))
  • 3 tsp matcha green tea powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 whole eggs
  • 1 1/4 cup non-dairy milk ((collagen))
  • 3 tbsp Swerve Sweetener (sweetener of choice)
  • 1/2 tsp coconut extract
  • 3 tbsp coconut butter

Instructions

  1. Step 1 Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  2. Add all dry ingredients to a small bowl.
  3. Stir well and set aside.
  4. Step 2 Add egg, sweetener, coconut butter, extract, and milk to a large bowl or stand mixer.
  5. Whip until frothy, about 1 minute.
  6. Step 3 Slowly add dry ingredients into wet ingredients in 2-3 batches.
  7. Let stand for 1-2 minutes.
  8. Portion and divide batter onto prepared baking sheet.
  9. Step 4 Bake for 20-22 minutes until bottoms and under edges are slightly golden brown.
  10. Top with extra melted coconut butter and chopped macadamia nuts if desired
