Ingredients

  • 2 tbsp butter
  • 1 green pepper ((medium, diced))
  • 1 clove garlic ((medium, diced))
  • 1 tsp oregano ((medium, diced))
  • 1 tsp cumin ((medium, diced))
  • 1 tsp paprika ((medium, diced))
  • 8 oz tomato purée
  • 2 cup chicken stock
  • 5 oz pork carnitas ((medium, diced))
  • 1 tsp pepper
  • 1/2 tsp salt
  • 1/2 cup cheddar cheese ((medium, diced))
  • 1/2 avocado (medium
  • 3 tsp cilantro ((medium, diced))
  • 3 tbsp sour cream
  • 1 tsp dried oregano

Instructions

  1. In a large saucepan place the butter, diced pepper and garlic and saute over medium heat for 3 minutes, until the butter is bubbling.
  2. Add the oregano, cumin and paprika and saute for a further 3 minutes, until fragrant.
  3. Add the tomato puree and chicken stock and bring to a simmer.
  4. Add the pork carnitas, salt and pepper.
  5. Allow to simmer for 2 minutes to ensure the pork is heated through.
  6. Ladle the soup between three bowls and garnish with the shredded cheddar, diced avocado, cilantro and sour cream.
