Low Carb Double Chocolate Fudge Muffins

Ingredients
- 1 cup almond flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup erythritol
- 1 1/2 tsp baking powder
- 1 tsp vanilla extract
- 2/3 cup heavy cream
- 3 oz butter ((melted))
- 1/2 cup sugar free chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease well.
- In a large bowl, whisk together the almond flour, cocoa powder, erythritol, and baking powder.
- Add the melted butter, heavy cream, and vanilla extract to the dry ingredients and stir until a smooth batter forms.
- Fold in the sugar-free chocolate chips.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes until a toothpick inserted in the center comes out clean.
- Let cool in the tin for 5 minutes before transferring to a wire rack.
