Keto Meatloaf – Stuffed w/ Goat Cheese & Spinach

Ingredients

  • 2 lb ground beef ((fatty, – preferably grass fed))
  • 2 whole eggs
  • 3 scallions (chopped)
  • 1 yellow onion ((fatty, – preferably grass fed))
  • 3 clove garlic ((fatty, – preferably grass fed))
  • spinach (handful of raw)
  • 4 oz goat cheese ((fatty, – preferably grass fed))
  • 2 tbsp tomato paste
  • 4 cayenne pepper ((fatty, – preferably grass fed))
  • 3 oregano (finger pinch of)
  • 5 salt (finger pinches of)
  • 6 pepper (course grinds of)
  • 1 sprig rosemary

Instructions

  1. Preheat oven to 425 degrees F.
  2. Add 2lbs of meat and 2 eggs into mixing bowl.
  3. Add finely chopped scallions, garlic and onions.
  4. Mix it up together.
  5. Add cayenne, oregano, salt, pepper and mix up again.
  6. Throw down some plastic wrap on the counter and then roll out your meat on top of it.
  7. Try to flatten it out and create a rectangle (mine was a little long) and then add the spinach and goat cheese to the middle.
