Ingredients
- 1/2 head cauliflower
- 2 slice bacon
- 1/2 white onion ((Medium, Diced))
- 2 clove garlic ((Medium, Diced))
- 2 tbsp butter
- 2 tbsp cream cheese
- 1 cup cheddar cheese ((Medium, Diced))
- 1/4 cup heavy cream
- 1/2 oz pork rind
Instructions
- Base Heat skillet on medium heat.
- Also preheat the oven to 425 degrees.
- Chop onion, and garlic and bacon.
- Saute onion and garlic in skillet with butter and cook until onions are translucent.
- Add bacon and cook 2 minutes.
- Add cauliflower and cook until cauliflower is al dente (we will finish it off in the oven) Cheese Mixture Combine butter, 1 cup of cheddar cheese, cream cheese, and heavy cream in a small saucepan.
- Cook on low heat until eveything is melted together.
- Season to taste with salt and pepper.
- Transfer the cauliflower base to a large mixing bowl and add cheese mixture.
- Stir to combine.
- Place in a baking dish and top with 1/2 cup of cheddar cheese.
- Crush pork rinds to top to garnish.
- Bake for 10 minutes and then broil for 3-5 minutes to crisp the top of dish.
