Ingredients
- 1 1/2 lb ground beef
- 2 cup broccoli
- 1 cup beef broth
- 1 1/2 can tomatoes ((with Jalapeno))
- 1/2 can green chile
- 1/2 red onion ((with Jalapeno))
- 3 stems celery
- 1 tbsp butter
- 2 tsp cumin
- 2 tsp chili powder
- 1 1/2 tsp garlic
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp Italian seasoning
Instructions
- Melt the butter in a large pot or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it apart, until browned. Drain excess fat.
- Add the diced red onion and celery to the pot and sauté for 3-4 minutes until softened.
- Stir in the cumin, chili powder, garlic, paprika, onion powder, and Italian seasoning. Cook for 1 minute until fragrant.
- Add the canned tomatoes with jalapeños, green chiles, and beef broth. Stir to combine.
- Chop the broccoli into small pieces and add to the pot.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes until the broccoli is tender and the flavors have melded.
- Taste and adjust seasoning. Serve topped with sour cream or shredded cheese if desired.
