Ingredients

  • 1 1/2 lb ground beef
  • 2 cup broccoli
  • 1 cup beef broth
  • 1 1/2 can tomatoes ((with Jalapeno))
  • 1/2 can green chile
  • 1/2 red onion ((with Jalapeno))
  • 3 stems celery
  • 1 tbsp butter
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 1/2 tsp garlic
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp Italian seasoning

Instructions

  1. Melt the butter in a large pot or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it apart, until browned. Drain excess fat.
  2. Add the diced red onion and celery to the pot and sauté for 3-4 minutes until softened.
  3. Stir in the cumin, chili powder, garlic, paprika, onion powder, and Italian seasoning. Cook for 1 minute until fragrant.
  4. Add the canned tomatoes with jalapeños, green chiles, and beef broth. Stir to combine.
  5. Chop the broccoli into small pieces and add to the pot.
  6. Bring to a boil, then reduce heat and simmer for 25-30 minutes until the broccoli is tender and the flavors have melded.
  7. Taste and adjust seasoning. Serve topped with sour cream or shredded cheese if desired.
