Keto Chicken Noodle Soup Jars

Ingredients

  • 1 packet shirataki noodle ((rinsed and drained, 200 g/ 7.1 oz))
  • 2 tsp chicken broth ((rinsed and drained, 200 g/ 7.1 oz))
  • 1 cup cooked chicken breasts ((rinsed and drained, 200 g/ 7.1 oz))
  • 1/2 cup beansprouts ((rinsed and drained, 200 g/ 7.1 oz))
  • 1/4 cup grated carrot ((rinsed and drained, 200 g/ 7.1 oz))
  • 1 spring onions ((rinsed and drained, 200 g/ 7.1 oz))
  • 2 tbsp red bell pepper ((rinsed and drained, 200 g/ 7.1 oz))
  • 2 tbsp yellow bell pepper ((rinsed and drained, 200 g/ 7.1 oz))
  • 2 tbsp extra-virgin olive oil ((rinsed and drained, 200 g/ 7.1 oz))
  • chile pepper ((rinsed and drained, 200 g/ 7.1 oz))
  • fresh coriander ((rinsed and drained, 200 g/ 7.1 oz))

Instructions

  1. Open your Shirataki noodles and rinse them well under cold water, according to packet directions.
  2. Drain and leave in colander until ready.
  3. Option: to remove any unwanted smell, use this method to prepare shirataki noodles and keep them in the fridge until ready to use.
  4. Place your powdered stock in the bottom of each jar.
  5. Next place your chicken and then the drained noodles.
  6. Top with the red peppers, spring onions, chilli, coriander, carrot and bean sprouts and finish off with a tablespoon of olive oil per jar.
  7. Place lid on jar and store in fridge until ready to eat.
  8. To Serve: Remove lid and pour boiling water into jar until full.
  9. Stir contents well and let sit for about five minutes to allow the vegetables to soften.
