Keto Buffalo Chicken Tenders

Ingredients
- 1 lb chicken fingers ((organic))
- 3/4 cup almond flour
- 1/4 cup pork rind ((organic))
- 2 tbsp grass-fed butter
- 1/4 cup buffalo sauce ((organic))
- 2 whole eggs ((organic))
Instructions
- Mix the pork rinds and the almond flour.
- Set up a breading station with your chicken, beaten eggs and almond flour/pork rinds mixture.
- Dip all the chicken tenders in the egg, then in the almond flour/pork rinds and sauté in light olive oil for about 4 minutes on each side.
- Add the wing sauce and butter to a bowl and mix till combined.
- Add the cooked chicken tenders and dip each one in the sauce.
- Serve with a low carb blue cheese dressing (I use Marzetti) and enjoy!
