Keto Buffalo Chicken Tenders

Ingredients

  • 1 lb chicken fingers ((organic))
  • 3/4 cup almond flour
  • 1/4 cup pork rind ((organic))
  • 2 tbsp grass-fed butter
  • 1/4 cup buffalo sauce ((organic))
  • 2 whole eggs ((organic))

Instructions

  1. Mix the pork rinds and the almond flour.
  2. Set up a breading station with your chicken, beaten eggs and almond flour/pork rinds mixture.
  3. Dip all the chicken tenders in the egg, then in the almond flour/pork rinds and sauté in light olive oil for about 4 minutes on each side.
  4. Add the wing sauce and butter to a bowl and mix till combined.
  5. Add the cooked chicken tenders and dip each one in the sauce.
  6. Serve with a low carb blue cheese dressing (I use Marzetti) and enjoy!
