Keto Au Gratin Brussels Sprouts

Ingredients

  • 6 oz brussels sprouts
  • 1 3/4 oz onions
  • 1 tsp minced garlic
  • 2 tbsp butter
  • 1 tbsp soy sauce
  • 1/2 tsp liquid smoke
  • 1/4 tsp pepper
  • 1/2 cup heavy cream
  • 2 1/2 oz cheddar cheese ((grated))
  • 1/4 tsp paprika
  • 1/4 tsp turmeric
  • 1/8 tsp xanthan gum
  • 1/2 oz pork rind
  • 3 tbsp parmesan cheese

Instructions

  1. Preheat oven to 375F.
  2. Chop stems off of brussels sprouts, then cut them all in half.
  3. Dice onion and mince garlic.
  4. Add butter to pan over high heat and add brussels sprouts and pepper.
  5. After 2-3 minutes, add onion and garlic.
  6. Once onion are soft, add the soy sauce and liquid smoke.
  7. Set aside.
  8. In a saucepan, combine all sauce ingredients.
  9. Stir until well combined and creamy.
  10. Add sauce to brussels sprouts and mix together well.
  11. Portion out into 4 ramekins.
  12. Grind pork rind crust ingredients in a spice grinder and top each ramekin with a good portion of crust.
  13. Bake for 17-20 minutes until crust is slightly crisped.
