Ingredients
- 1 cup almond flour
- 2 tbsp coconut flour
- 1/2 tsp baking powder
- 1/4 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup erythritol
- 2 large eggs
- 4 tbsp coconut oil
- 1/2 tsp vanilla extract
- 1/2 tsp almond extract
- 2 tbsp sugar-free jam
- 1 tbsp shredded coconut
Instructions
- Preheat your oven to 350F.
- Combine all your dry ingredients, then add wet ingredients and combine well. Form your cookies on a parchment paper lined baking sheet.
- Add an indent in the middle of each cookie using your finger. Bake for about 16 minutes or until the cookies turn golden and crack slightly. Let cookies cool on a wire rack and add a bit of sugar free jam to each indent. Sprinkle some shredded coconut on top of each one and enjoy!
