Instant Pot® Keto Chicken and Kale Stew

Ingredients

  • 1 tbsp butter
  • 1/2 onions (chopped)
  • 2 boneless chicken breast ((chopped))
  • 14 1/2 oz diced tomatoes
  • 3 cup chopped kale
  • 1 cup chicken broth
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano
  • 1/4 tsp ground black pepper

Instructions

  1. Turn on a multi-functional pressure cooker (such as Instant Pot(R)) and select Saute function.
  2. Melt butter and cook onion until soft and tender, about 3 minutes.
  3. Add chicken; cook until golden and crispy, about 5 minutes.
  4. Place diced tomatoes, kale, chicken broth, salt, garlic powder, oregano, and black pepper in the pot.
  5. Close and lock the lid.
  6. Select high pressure according to manufacturer's instructions; set timer for 10 minutes.
  7. Allow 10 to 15 minutes for pressure to build.
  8. Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes.
  9. Complete releasing pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes.
  10. Unlock and remove the lid.
