Grilled Honey Chili Lime Cilantro Chicken

Ingredients

  • 4 chicken breasts ((medium, boneless, skin-less))
  • 2 red bell pepper ((medium, boneless, skin-less))
  • 2 tbsp chopped cilantro ((medium, boneless, skin-less))
  • 1/4 cup fresh lime juice
  • 2 tbsp olive oil
  • 2 garlic cloves ((medium, boneless, skin-less))
  • 1/2 chicken stock cubes
  • 1/2 tsp salt
  • cracked black pepper ((medium, boneless, skin-less))
  • 1 tsp honey ((medium, boneless, skin-less))
  • 1 tsp crushed red pepper flakes ((medium, boneless, skin-less))

Instructions

  2. Whisk the ingredients for the marinade in a small bowl.
  3. Cut chicken breasts into cubes and place chicken in a large plastic bag or bowl and add the marinade.
  4. Mix well to combine.
  5. Seal the bag or cover bowl and place in the fridge to marinate for 30 minutes, or up to 24 hours.

  7. Pre-heat grill, pan or griddle over medium-high heat.
  8. Drain chicken from the marinade and soak wooden skewers in water for 1 minute.
  9. Tread the skewers alternating with chicken cubes and bell pepper slices.

  11. Grill chicken skewers for 5 minutes on each side, drizzling some of the marinade from time to time until cooked through and lightly charred.
  12. Serve immediately with salad, rice, or noodles.
  13. Garnish with chopped cilantro and Enjoy! ♥︎
