Green Omelette

Ingredients

  • 2 whole eggs
  • 1/2 cup spinach
  • 1/2 avocado (sliced)
  • 1/2 tsp turmeric
  • 1 tsp coconut oil

Instructions

  1. Crack the eggs into a blender.
  2. Drop a handful of spinach in and add the turmeric.
  3. Blend everything until the mixture is smooth.
  4. Set a frying pan over medium heat and pour in some coconut oil.
  5. When the oil is heated, fry the egg mixture for 2-3 minutes.
  6. Flip the egg and fry for another 1-2 minutes.Set the omelette in a plate.
  7. Put some sliced avocado and a couple of spinach in one side, then fold the other side on top of the avocado and spinach filling.
  8. Enjoy!
