Green Omelette

Ingredients
- 2 whole eggs
- 1/2 cup spinach
- 1/2 avocado (sliced)
- 1/2 teaspoon turmeric
- 1 teaspoon coconut oil
Instructions
- Crack the eggs into a blender.
- Drop a handful of spinach in and add the turmeric.
- Blend everything until the mixture is smooth.
- Set a frying pan over medium heat and pour in some coconut oil.
- When the oil is heated, fry the egg mixture for 2-3 minutes.
- Flip the egg and fry for another 1-2 minutes.Set the omelette in a plate.
- Put some sliced avocado and a couple of spinach in one side, then fold the other side on top of the avocado and spinach filling.
- Enjoy!
