Easy Tomato Feta Soup Recipe – Low Calorie, Low Carb, Keto

Ingredients

  • 2 tbsp olive oil ((or butter))
  • 1/4 cup chopped onion
  • 2 clove garlic
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 1 tsp pesto sauce ((or butter))
  • 1/2 tsp dried oregano
  • 1 tsp dried basil
  • 1 tbsp tomato paste ((or butter))
  • 10 tomatoes (skinned)
  • 1 tsp honey ((or butter))
  • 3 cup water
  • 1/3 cup heavy cream
  • 2/3 cup feta cheese ((or butter))

Instructions

  1. Heat olive oil (butter) over medium heat in a large pot (Dutch Oven).
  2. Add the onion and cook for 2 minutes, stirring frequently.
  3. Add the garlic and cook for 1 minute.
  4. Add tomatoes, salt, pepper, pesto (optional), oregano, basil, tomato paste and water.
  5. Bring to a boil, then reduce to a simmer.
  6. Add sweetener.
  7. Cook on medium heat for 20 minutes, until the tomatoes are tender and cooker.
  8. Using an immersion blender, blend until smooth.
  9. Add the cream and feta cheese.
  10. Cook for 1 more minute.
  11. Add more salt if needed.
  12. Serve warm.
  13. Recipe Notes For people who are against using heavy cream in keto diet, you can use almond milk.
