Cold Salmon Salad With Citrus Viniagrette

Ingredients

  • 16 oz salmon fillets
  • 4 cup lettuce
  • 1/4 red onion ((sliced thin))
  • 1 tomatoes (chopped)
  • 1 cucumber (sliced)
  • 1/4 cup orange juice ((sliced thin))
  • 1/2 cup avocado oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried thyme

Instructions

  1. Place the lettuce mix, sliced onions, cucumbers and tomatoes on individual plates.
  2. Cut the cold salmon into 1" chunks and layer over vegetables.
  3. To make the viniagrette:
  4. In a pint sized jar or bottle, add fresh squeezed orange juice, avocado oil, salt, pepper, rosemary, and thyme.
  5. Shake or whisk to combine.
  6. Pour 1/4 of the mixture over each salad and serve.
