Cold Salmon Salad With Citrus Viniagrette

Ingredients
- 16 oz salmon fillets
- 4 cup lettuce
- 1/4 red onion ((sliced thin))
- 1 tomatoes (chopped)
- 1 cucumber (sliced)
- 1/4 cup orange juice ((sliced thin))
- 1/2 cup avocado oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried rosemary
- 1/2 tsp dried thyme
Instructions
- Place the lettuce mix, sliced onions, cucumbers and tomatoes on individual plates.
- Cut the cold salmon into 1" chunks and layer over vegetables.
- To make the viniagrette:
- In a pint sized jar or bottle, add fresh squeezed orange juice, avocado oil, salt, pepper, rosemary, and thyme.
- Shake or whisk to combine.
- Pour 1/4 of the mixture over each salad and serve.
