Ingredients

  • 1 1/2 lb boneless skinless chicken breasts ((or thighs))
  • 1/2 cup diced onions
  • 2 garlic cloves ((or thighs))
  • 8 oz mushrooms ((or thighs))
  • 2 tbsp butter
  • 1 cup chicken broth
  • 2/3 cup heavy whipping cream
  • 1/4 cup parmesan cheese
  • 1/2 tsp oregano
  • 1/4 tsp thyme
  • 1/4 tsp parsley
  • 1/2 tsp xanthan gum

Instructions

  1. Saute onion, garlic, and mushrooms in 1 tbsp butter in a cast iron skillet.
  2. approx 6 minutes or until they are cooked through.Remove the veggies from pan and set aside.Add 1 tbsp butter to the skillet then brown chicken breasts on both sides.Add veggie mixture back to pan.Add all other ingredients then simmer on medium-low for 20 minutes with lid on.Remove lid and add 1/2 tsp xantam gum then simmer on medium/low until sauce thickens.
