Chicken & Mushroom Gravy Recipe {Keto/Low Carb}

Ingredients
- 1 1/2 lb boneless skinless chicken breasts ((or thighs))
- 1/2 cup diced onions
- 2 garlic cloves ((or thighs))
- 8 oz mushrooms ((or thighs))
- 2 tbsp butter
- 1 cup chicken broth
- 2/3 cup heavy whipping cream
- 1/4 cup parmesan cheese
- 1/2 tsp oregano
- 1/4 tsp thyme
- 1/4 tsp parsley
- 1/2 tsp xanthan gum
Instructions
- Saute onion, garlic, and mushrooms in 1 tbsp butter in a cast iron skillet.
- approx 6 minutes or until they are cooked through.Remove the veggies from pan and set aside.Add 1 tbsp butter to the skillet then brown chicken breasts on both sides.Add veggie mixture back to pan.Add all other ingredients then simmer on medium-low for 20 minutes with lid on.Remove lid and add 1/2 tsp xantam gum then simmer on medium/low until sauce thickens.
