Cauliflower Soup with Cheddar

Ingredients

  • 2 pints chicken stock
  • 1 cauliflower (Large)
  • 7 ounces heavy cream
  • 3 1/2 ounces cheddar cheese
  • 2 cloves garlic (Large)
  • 1 pinch nutmeg
  • pepper (to taste)
  • salt (to taste)

Instructions

  • Heat up the chicken stock.Chop up cauliflower and garlic into small bits.Add chopped cauliflower and garlic to stock.Simmer for 10-15 minutes, until cauliflower is soft.Add cheddar cheese and heavy cream.Season with salt, pepper and nutmeg to taste.Cool and blitz in a food processor.
