Cauliflower Mac & Cheese (low-carb, keto)

Ingredients

  • 1 lb cauliflower florets
  • 1/2 cup heavy cream
  • 1 tbsp butter
  • 4 oz cheddar cheese
  • 1/2 tsp dijon mustard ((optional))
  • 1/4 tsp garlic powder

Instructions

  1. Prepare cauliflower to desired tenderness 2.
  2. In a small pot, over MEDIUM heat, melt butter 3.
  3. Add heavy cream and bring to a simmer 4.
  4. Mix in dijon mustard, garlic powder, salt, and pepper 5.
  5. Slowly add cheese (about 1 oz at a time) and mix until all cheese melted (water can be used here if you prefer a thinner cheese sauce) 6.
  6. Reduce heat to LOW and add cauliflower 7.
  7. Mix until cauliflower is completely covered 8.
  8. Remove from heat and serve!
