Cauliflower Mac & Cheese (low-carb, keto)

Ingredients
- 1 pound cauliflower florets
- 1/2 cup heavy cream
- 1 tablespoon butter
- 4 ounces cheddar cheese
- 1/2 teaspoon dijon mustard (optional)
- 1/4 teaspoon garlic powder
Instructions
- Prepare cauliflower to desired tenderness 2.
- In a small pot, over MEDIUM heat, melt butter 3.
- Add heavy cream and bring to a simmer 4.
- Mix in dijon mustard, garlic powder, salt, and pepper 5.
- Slowly add cheese (about 1 oz at a time) and mix until all cheese melted (water can be used here if you prefer a thinner cheese sauce) 6.
- Reduce heat to LOW and add cauliflower 7.
- Mix until cauliflower is completely covered 8.
- Remove from heat and serve!
