In food processor, combine first 5 ingredients.
Refrigerator until set.
Don't allow to refrigerate too long, or the dough will become rock hard!
Roll into ~1" balls (a little smaller).
Place on parchment paper-lined baking sheet.
Refrigerate.
In saucepan, melt chocolate.
Add coconut oil and sweetener.
Dip coconut balls completely into chocolate mixture and return to baking sheet.
Freeze until you want to eat.
