Pour water into a large pot, leaving enough room for your caulifower, and bring it up to the boil.
Once boiling, add the caulifower, diced garlic, salt and pepper to taste.
Simmer until the caulflower is easily mashable.
Once done, drain and mash, along with butter, mascarpone and additional salt and pepper to taste.
If you’d like your cauliflower mash extra creamy then add a few (or more) tablespoons of your milk of choice.
