Strawberry Cheesecake Popsicles – Keto and Low Carb

Ingredients

  • 1 1/2 cup strawberries ((fresh organic, hulled and chopped))
  • 1 1/4 cup heavy whipping cream
  • 3/4 cup cream cheese
  • 1/4 cup Swerve Sweetener (confectioners
  • 1 tsp pure vanilla extract
  • 2 tsp fresh lemon juice
  • 1/4 cup Swerve Sweetener (confectioners or powdered erythritol)

Instructions

  1. Preparation Add the strawberries to the bowl of a food processor and pulse a few times.
  2.  Scoop out 1/2 cup of the strawberries and set aside.
  3.  Add in the remaining ingredients and process until well combined.
  4.   Transfer to a bowl with a pouring spout and stir in the reserved 1/2 cup of strawberries.
  5. Pour the strawberry cream cheese mixture into popsicle molds .
  6. Freeze for at least 3 hours and enjoy!
