Spinach and Mushroom Smothered Chicken

Ingredients

  • 3 cup baby spinach ((fresh))
  • 1 3/4 cup fresh mushrooms ((fresh))
  • 3 green onions ((fresh))
  • 2 tbsp pecans ((fresh))
  • 1 1/2 tsp olive oil
  • 4 boneless skinless chicken breast halves
  • 1/2 tsp seasoning ((fresh))
  • 2 slice provolone cheese ((fresh))

Instructions

  1. In a large skillet, saute the spinach, mushrooms, onions and pecans in oil until mushrooms are tender.
  2. Set aside and keep warm.Sprinkle chicken with seasoning.
  3. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack.Grill chicken, covered, over medium heat or broil 4 in.
  4. from the heat for 4-5 minutes on each side or until a meat thermometer reads 170°.Top with cheese.
  5. Cover and grill 2-3 minutes longer or until cheese is melted.
  6. To serve, top each chicken breast with reserved spinach mixture.
