Spaghetti Squash Casserole

Ingredients

  • 1 spaghetti squash ((medium, halved lengthwise and seeds removed))
  • 1 onions (medium)
  • 2 plum tomatoes ((medium, halved lengthwise and seeds removed))
  • 1 cup cottage cheese
  • 1/2 cup mozzarella cheese ((medium, halved lengthwise and seeds removed))
  • 1/4 cup parmesan cheese
  • 2 clove garlic
  • 1/4 cup parsley ((medium, halved lengthwise and seeds removed))
  • 1 cup mushrooms ((medium, halved lengthwise and seeds removed))
  • 1 bag crumbles ((medium, halved lengthwise and seeds removed))

Instructions

  1. Preheat oven 400 and grease a 13 x 9 pan.Place squash cut side down on pan and bake for 40 minutes or until tender.Once cooked take a fork and scrape squash strands into a large bowl.Sauté onion in olive oil for 3 - 4 minutes.Add tomato's and mushrooms and cook 4 - 5 minutes.Add turkey sausage crumbles and cook 3 minutes or until mixture is dry.Add cottage cheese, mozzarella, parsley and onion mixture to the bowl with the squash.
  2. Stir to mix.Put mixture into squash shells and bake 40 - 50 minutes or until heated through.Sprinkle with Parmesan cheese and bake until melted.
