Keto Stuffed Peppers with cheese on top

Ingredients

  • 3 green bell pepper ((medium red, yellow))
  • 1 lb ground beef
  • 2/3 cup onions ((medium red, yellow))
  • 2 clove garlic ((medium red, yellow))
  • 15 oz diced tomatoes
  • 6 oz shredded cheddar cheese
  • 2 tbsp butter
  • 1 tbsp salt
  • 1/2 tbsp oregano
  • 1/2 tbsp pepper
  • 1/2 tbsp chili powder
  • 1 tsp dried leaves oregano

Instructions

  1. Prep 10 minutes Cook 50 minutes Ready in 1 hour
  2. Rinse the peppers and cut them in half lengthwise.
  3. Remove any seeds and membranes.
  4. Peel onion and garlic.
  5. Finely chop the onion and mince the garlic.
  6. In a non-stick skillet over medium heat, melt the butter.
  7. Add the chopped onion and garlic and cook for about 8 minutes.
  8. Stir occasionally until golden-brown and softened.
  9. Heat the oven to 350°F.
  10. Add the ground beef and the seasonings.
  11. Using a spatula break the meat up as it cooks.
  12. Let the meat cook for 8-10 minutes.
  13. Sir in the tomatoes and let it simmer for another 15 minutes Remove the stuffing from the heat.
  14. Evenly divide the stuffing in each half pepper.
  15. Sprinkle each pepper with the shredded cheddar cheese.
  16. Bake until the cheese is melted and the peppers are a little bit softened.
  17. Enjoy!
