Keto Raspberry Vinaigrette

Ingredients

  • 1/2 cup raspberries ((Golden))
  • 1/2 cup white wine vinegar
  • 1/2 cup extra-virgin olive oil
  • 35 drop liquid stevia

Instructions

  1. Add the raspberries and white wine vinegar to a blender and blend until smooth.
  2. Strain through a fine mesh sieve to remove the seeds, pressing with a spoon to extract all the liquid.
  3. Pour the strained raspberry vinegar mixture into a jar or bottle.
  4. Add the olive oil and liquid stevia.
  5. Seal tightly and shake vigorously until the dressing is well emulsified.
  6. Taste and adjust sweetness as needed. Store refrigerated for up to one week.
