Keto Parmesan Roasted Cauliflower

Ingredients
- 1 head cauliflower ((cut into florets, can use frozen))
- 1 onions (medium)
- 4 thyme (springs)
- 4 garlic cloves ((cut into florets, can use frozen))
- 3 tbsp olive oil ((cut into florets, can use frozen))
- 1/2 tsp kosher salt ((cut into florets, can use frozen))
- 1/2 cup grated parmesan cheese
Instructions
- Preheat oven to 425Toss cauliflower florets on a large rimmed baking sheet with onion, thyme, garlic, and oil; season with salt and pepper.
- Roast, tossing occasionally, until almost tender, 35 minutes.
- Remove from oven, sprinkle Parmesan over, toss to combine, and roast until cauliflower is tender, 10-12 minutes longer.
