Keto Parmesan Roasted Cauliflower

Ingredients

  • 1 head cauliflower ((cut into florets, can use frozen))
  • 1 onions (medium)
  • 4 thyme (springs)
  • 4 garlic cloves ((cut into florets, can use frozen))
  • 3 tbsp olive oil ((cut into florets, can use frozen))
  • 1/2 tsp kosher salt ((cut into florets, can use frozen))
  • 1/2 cup grated parmesan cheese

Instructions

  1. Preheat oven to 425Toss cauliflower florets on a large rimmed baking sheet with onion, thyme, garlic, and oil; season with salt and pepper.
  2. Roast, tossing occasionally, until almost tender, 35 minutes.
  3. Remove from oven, sprinkle Parmesan over, toss to combine, and roast until cauliflower is tender, 10-12 minutes longer.
